Spaghetti Meatballs

Penne with roasted peppers and mascarpone

Ingredients

2 tbsp virgin olive oil

2 oz diced bacon

2 chopped scallions

1 yellow  and red pepper grilled and cut in strips

3 leaves basil cut

2 tbsp of mascarpone

salt to taste

1/2 lb of penne or any pasta of your choice

2 tbsp grated parmigiano reggiano

Preparation

1. Heat the oil in a skillet. Saute the bacon until it is almost crunchy. Add the scallions. Mix in the peppers, basil and mascarpone. Let cook for 2 minutes. Salt to taste. Cook pasta in salted water. Mix the pasta in with the sace, sprinkle with parmesan and serve!

simple Spaghetti

Hubby cooks this spaghetti one evening. It has simple ingredients in it with just touch of oil and cheese mixed together. On the other hand I found a bag of shrimp in the freezer so I cooked some of it and then I added it to the spaghetti. He make some peas too so I added it as well. Now looks like a dinner eh!

Vegetable Lasagna

Lasagna is my top favourite pasta. I used to make roll up lasagne but I’ve been busy these days so I just buy it in the grocery store. I love this particular vegetable lasagne. You know why? Well because it’s loaded with cheese’s and I find it very tasty and yummy. My daughter loves it when she tried it.

Linguine with meatballs

I made this Linguine pasta last week. I added some beef meatball and Alfredo sauce that I bought at the grocery store. I work days and sometimes I get tired of cooking so I just do a simple meal like this. It only require boiling the pasta and done. The meatballs were also ready made and cook. I just heat them with the sauce.

I’m not an Italian but for some reasons I just love to eat pasta. My favorite pasta is fettuccine, linguine, and lasagna. I also love seafood but it has nothing to do weather I’m Italian or Filipino. I think most people eat seafood unless they allergic like my husband. That’s too bad eh! I do get itchy a little bit but I don’t care…lol Anyway enough about blah blah. I’ m happy to share with what I came up last week with Linguine and shrimps. Believe it or not I made up the recipe and it was so good if I may say so!
Ingredients:
1 package tri-color fresh linguine
1 package jumbo shrimps
1 package sliced mushrooms
1 bunch of green onions
1 big can tomato sauce
1 large onion
4 cloves garlic minced
2 tbsp. Olive oil
Salt and pepper

Directions:
Get your pan ready! Cut onions, peel garlic and mince them. Add 2 tbsp of olive oil and Sauté garlic, onion, shrimps, mushrooms and the green onions. Add salt and pepper according to your taste. Set aside when it’s done. Boil pasta until its cook. Transfer it to a dish. Open the tomato sauce and simmer it for a little bit and then mix it with the pasta and the shrimps. I hope you like it!
