I have shared these photos at Facebook already so if you are my friends then you probably seen it. Anyway these are called potato mice! Hubby and my daughter made these last week during snowstorm. She didn’t go to school that day because it was cancelled due to snowstorm.

Thursday, November 25th, 2010I finally have time to share my cake pops that we make during my daughter’s 6th birthday last September. As you may have known that my 2 kids were born in the same month so we have to celebrate 2 birthdays in a month. Anyway I showed my daughter and her friends how to make cake pops on her b-day. It was also my first attempt of making cake pops so it was hard for me making it and the taking pictures at the same time. Some of the pictures were blurry from moving here and there. Well I have to say it wasn’t bad cake pops considering it was my first time. I just want to thank Bakerella for the inspiration. I love your baking stuff and looking forward to seeing you here in Toronto.
Note: I would have love to post pictures with the girls making the cake pops but I don’t know how the parents would feel so I choose not to!
Banana bread/cake

It’s been a while since I participated in food memes. Summer has been very busy for me and now I just returned to work for almost a month. I’ve been busy working 6 days at the most too. Anyway how’s everyone?
I have too many ripe bananas that day so I decided to make a banana cake and muffins. I will share the muffins next time. Okay? In many occasions I ended up throwing lots of bananas because we couldn’t eat them when it’s too ripe. But for banana cakes/muffins, banana split it’s perfectly acceptable. Anyway here’s the recipe for banana bread/cakes and muffins. Recipe from Joy of Baking.


Banana Muffins: Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the middle of the oven. Butter or spray with a non stick spray, 12 – 1/2 cup muffin pan.
Place the nuts on a baking sheet and bake for about 8 to 10 minutes or until lightly toasted. Let cool and then chop coarsely.
In a large bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts.
In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla. With a rubber spatula or wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.) Spoon the batter into the prepared muffin tins. Bake about 20 – 25 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for five minutes and then remove muffins from pan. Serve warm or at room temperature.
Banana Bread Recipe:
1 cup (115 grams) walnuts or pecans, toasted and coarsely chopped (optional)
1 3/4 cups (230 grams) all-purpose flour
3/4 cup (150 grams) granulated white sugar
1 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 large eggs, lightly beaten
1/2 cup (113 grams) unsalted butter, melted and cooled
3 ripe large bananas (approximately 1 pound or 454 grams), mashed well (about 1-1/2 cups)
1 teaspoon pure vanilla extract
Basa Fish
Thursday, September 2nd, 2010This is called Basa fish. I don’t know if you know this kind of fish but its color white. It’s frozen one and I actually love it. It was on sale at 7.00 dollars so I bought 2 packages. This is how I cooked the Basa fish. I thawed it then sliced. I seasoned it with salt and pepper. Then I coated them with eggs and flour. Fry them with butter. That’s all. Doesn’t it look delicious? Btw I just goggled Basa fish and it’s actually belong to a catfish family and are native to Vietnam and Thailand.

This is how I did it with the glaze!

This is the finished Strawberry Cheesecake!!!
3 pkgs. cream cheese, softened
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup sour cream
1 large pkg. strawberries, stems removed
1 1/2 Graham cracker
1 pkg. strawberry glaze
Directions:
Mix cream cheese , sugar and vanilla at medium speed with electric mixer until well blended. Add eggs, mix until blended. Pour into crust.Bake at 350 F at 40 minutes until center is almost set.. Cool and refrigerate overnight or 3-5 hours. Open the strawberry glaze and follow the instructions. Coat the strawberries with the mix glazed and arrange them into the cheesecake.
Corn with Coconut milk – Ginataang Mais

I made this corn with coconut milk this week. It’s also called Ginataang mais. I improvised whatever I have in the house. You might want to try this one day. Here are the ingredients.
1 cup black sweet rice (regular glutinous rice was the original)
2 cans coconut milk
2 cans cream of corn (regular can corn was the original)
1 tsp. cinnamon powder
Open 2 cans of coconut milk and dump it on the pot and then add sweet rice. Keep stirring! And oh you might want to wash your rice before adding it. That’s what I did… Add corn while the rice is almost cook then add cinnamon. Keep stirring until it’s done! That’s it.
